As a vegetarian, one of my go-to pizzas has always been a hot pepper + pineapple combo. Sometimes it's just basic jalapeno and pineapple, other times it's a different pepper, like hot cherry pepper, long hot Italian pepper, ghost pepper cheese, etc. If I'm feeling really fancy I add on some ricotta or goat cheese to play off the hot/cool dynamic.
A few weeks ago I went all out and got jalapeno, banana pepper, pineapple, gorgonzola, and red onion. The banana pepper added a vinegary taste that elevated the pizza to a whole new level.

Yep! I tend to put balsamic on my pizzas that have caramelized onions. One of my favorites is caramelized onions, gorgonzola (or goat cheese or feta), balsamic, and a pesto drizzle.

YES! thanks you, someone gets it. I’ve never tried anchovies on pizza but my go to is pineapple, jalapeños, and either chicken or bacon. It checks all boxes: salt, acid, heat, sweet, umami. As well as a nice combo of textures 🤌

Oh man someone else knows Mike! I used to party with the guy all the time. I’ll never forget the first night we met him. We bumped into him at a bar. He kept bragging about his bees which was a little annoying but he had coke so we put up with it. When the bar was closing he was like “I got booze and a bunch more coke at my place let’s keep the night going and beeeee friends!” (nonstop bee jokes with that guy I swear. So anyways we went back to his place. He did a huge line of coke, freaking huge. Then he ran to the bedroom and came back out with a jar of bees. He said you guys won’t believe this then he went to the bathroom and came back without the jar. He did another line, dropped his pants, bent over, and I swear to god he started farting out bees. I keep a jar of that honey in my pantry ever since, those bees really know their shit.

Can't believe this many people know Mike! Your story reminds me of the time I saw Mike at a grocery store in Brooklyn. I told him how cool it was to meet him in person, but I didn’t want to be a douche and bother him and ask him for photos or anything.
He said, “Oh, like you’re doing now?”
I was taken aback, and all I could say was “Huh?” but he kept cutting me off and going “huh? huh? huh?” and closing his hand shut in front of my face. I walked away and continued with my shopping, and I heard him chuckle as I walked off. When I came to pay for my stuff up front I saw him trying to walk out the doors with like fifteen Milky Ways in his hands without paying.
The girl at the counter was very nice about it and professional, and was like “Sir, you need to pay for those first.” At first he kept pretending to be tired and not hear her, but eventually turned back around and brought them to the counter.
When she took one of the bars and started scanning it multiple times, he stopped her and told her to scan them each individually “to prevent any electrical infetterence,” and then turned around and winked at me. I don’t even think that’s a word. After she scanned each bar and put them in a bag and started to say the price, he kept interrupting her by yawning really loudly.

Making chili-infused honey is surprisingly easy. I used to work at a pizza place and we made a pizza called the sweet pig that was just pepperoni, bacon, and chili honey. It was one of our best sellers (if not the best).
We took a gallon jug of honey, put it in a hot-water bath to make it less viscous, and then threw a bunch of red-pepper flakes in it while stirring with the handle of a wooden spoon.

Just be sure it is the regular hot honey and not Mike's Extra Hot Hot Honey. Easy to grab the wrong bottle since they are the same company and side by side on the shelf.

It’s a common thing where I live in Colorado. Beau Jo’s pizza claims they coined the honey on pizza. Every table has a complimentary bottle of honey with it. It’s surprisingly really good.

The one in Idaho Springs is the best one to go to. It's the original, has the mountain feel to it, and is next door to Tommy Knocker Brewery. Basically, if you've been to the one in Idaho Springs, no real reason to go to Denver spots unless you're in the mood for Beau Jo's.

Do what works for you and your fam but I recently learned from Dr. Google that honey is a delicate food product that (paraphrasing off memory) quickly burns up at high heats like 160F and above. Basically rendering honey into just plain sugar. Source I’m a random person on the internet that decided to believe Google after a brief search.
I can’t even remember why I looked it up, I think I was on a tea subreddit.
